Ingredients
  

For the Salad:

  • 1 lb shrimp, peeled and deveined
  • 6 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/2 cup cup cucumber, sliced
  • 1/4 cup feta cheese (optional)
  • 2 tsp fresh cilantro, chopped

For the Dressing:

  • 3 tsp olive oil
  • 2 tsp fresh lime juice
  • 1 tsp honey
  • 1 garlic clove, minced
  • 1/2 tsp Dijon mustard
  • Salt & black pepper to taste

Instructions
 

  • Cook the shrimp: Heat a skillet over medium heat. Drizzle with a little olive oil and add the shrimp. Season with salt and black pepper. Cook for 2-3 minutes per side until pink and opaque. Set aside.
  • Make the dressing: In a small bowl, whisk together olive oil, lime juice, honey, garlic, Dijon mustard, salt, and pepper.
  • Assemble the salad: In a large bowl, toss the greens, cherry tomatoes, red onion, cucumber, avocado, and feta cheese.
  • Add the shrimp: Top the salad with the cooked shrimp and drizzle with the lime dressing.
  • Garnish & serve: Sprinkle fresh cilantro on top and enjoy immediately!
